Smoky Goddess Bowl w/ Chickpeas and Sweet Potato

This smoky goddess bowl is remarkably easy to make whilst bursting with all the right flavours. It has just the right crunch provided by the toasted pumpkin seeds and oven baked chickpeas. Leftovers are delicious hot or cold especially with a dollop of hummus.

Smoky Goddess Bowl w/ Chickpeas and Sweet Potato

Serves 4 

Ingredients

for the chickpeas:

1 can chickpeas, drained and washed

1 tsp smokey paprika

1 tsp olive oil 

1 tsp maple syrup 

for the sweet potato:

1 sweet potato, peeled and cubed

1 tsp olive oil 

1 garlic, grated

1 tsp smokey paprika 

1 tsp maple syrup 

a pinch of salt + pepper

And

1 bag of mixed green salad

1 avocado, cut in half, de-stone and cut into cubes 

50g pumpkin seeds, toasted

1 bunch cilantro

Method

1. Preheat the oven to 180°C.

2. In a small bowl combine the drained chickpeas with the smoked paprika, olive oil and maple syrup. Season with salt and pepper. Stir with a spoon until everything is covered in the sauce. Pour the contents onto a lined baking tray, making sure to only spread it across half the baking tray. 

3. In a small pot heat some water and cook the cubed sweet potato for 15 minutes until it's soft enough to prick with a fork. 

4. Transfer your drained sweet potato to the bowl used for the chickpeas. Mix in the olive oil, grated garlic, smoked paprika spice, maple syrup, a pinch of salt and paprika. Give it a good stir with a spoon before transferring it to the other half of the baking tray making sure it is evenly spread out next to the chickpeas. 

5. Transfer the baking tray to your preheated. Bake the sweet potato and chickpeas for 30 minutes until crispy. 

6. To assemble add your bag of mixed green salad to a bowl. Top with the diced avocado, baked sweet potato, chickpeas, toasted pumpkin seeds and cilantro. Serve as is or drizzle with a little extra virgin olive oil.
