This is my go to fifteen-minute supper when I am short on time or simply don't feel like making a big mess in the kitchen. The perfect impromptu green soup for when you are looking for a healthy fix that takes next to no time to prepare but hits all the right spots at the same time. Especially if you have been fully indulging in all the activities leading up to Christmas and New Year...
I'll usually make a two litre batch, then eat the leftovers at work or keep some in the freezer for an even faster dinner. Drizzle with some plant based yogurt, a sprinkle of toasted pumpkin seeds and a little watercress watercress, then serve with a toasted slice of bread.
Green Detox Soup
Makes 2 litres
1 1/2 courgette, sliced into 2 cm cubes
1 broccoli, roughly chopped - including the stem
160g frozen peas
1 litre water
pea sprouts, toasted pumpkin seeds and plant based yogurt
1. In a large pot heat the water with your vegetable stock pot, broccoli and sliced courgettes. Simmer for 8 minutes. Stir in the frozen peas and cook for a further 2 minutes.
2. Puree the soup in batches or pour into your vitamin to blend into a silky smooth green soup.
3. Season to taste with salt, pepper and chilli if you like it with a touch of spice. Add a little more water if you prefer a thinner soup.
4. Serve garnished with some pea sprouts, pumpkin seeds and a swirl of yogurt.
